Smoked Chicken Kathi Roll

Ingredients:

For the Chicken:

  • 1 lbs boneless chicken thighs cut into 1.5 inch pieces

  • 3/4 cup greek yogurt or Fage 5% yogurt

  • 1/4 cup mayonnaise

  • 2 tablespoons ginger garlic paste

  • 1/4 cup mustard oil

  • 1/2 tablespoon paprika powder

  • 1/2 tablespoons jeera (cumin) powder

  • 1 teaspoon garam masala powder

  • 1/2 teaspoon nutmeg powder

  • 1/4 teaspoon cinnamon powder

  • Pinch of red color 

  • 2 tbsp mustard oil for roasting

  • 2 tablespoons lemon juice

  • Kosher Salt to taste

For Smoking:

  • 2 pieces of coal

  • 1 tbsp desi ghee

For Kathi Rolls:

  • 5 large Spinach tortillas

  • Equal parts of yogurt and sour cream ( approximately ½ cup each) add 2 tablespoons chopped mint , salt, pepper and ½ thinly sliced cucumber.

  • 5 eggs (optional)

  • Mint chutney 

  • Sliced red onions

  • Cilantro 

Other optional fillings:

  • Pickled onions

  • Hummus

  • Roasted chickpeas

  • Lettuce

Instructions:

  1. In a bowl add the thick yogurt and the mayo and whisk well.

  2. Now add the mustard oil, all the spices, ginger garlic paste, salt, lemon juice and red food color and mix well.

  3. Add the chicken pieces and mix well until all the chicken pieces are well coated with the marinade.

  4. Cover the bowl with a cling film and keep the marinated chicken in the refrigerator overnight.

  5. In a cast iron skillet, heat some oil and cook the marinated chicken until tender. 

  6. Heat the 2 pieces of coal until grey. In the skillet, put a piece of foil in the center, place the coal on the foil and pour the melted ghee. Cover the skillet immediately and let the chicken get smoked for a good 10 minutes.

  7. To make the kathi rolls, take large spinach tortillas, heat on a flat skillet. Lightly butter one side and break an egg on it. Flip to cook the egg pressing lightly on the yolk part. Remove on to a board lined with parchment square. 

  8. Now apply a little bit of the mint chutney on top of the egg, spread some of the yogurt mix, top with the smoked chicken pieces, cilantro and onions and tightly roll with the help of parchment paper. Cut into half and serve !
