Chilli Garlic Chicken

Ingredients: 

  • 300 g chicken breast or tenders cut into small pieces

  • 1/2 tsp salt

  • 1 tsp ginger garlic paste

  • 1 tsp rice vinegar

  • 4 tbsp cornflour divided

  • 2 tbsp all purpose flour

  • 2 tbsp vegetable oil for frying

  • 2 tbsp vegetable oil for saute

  • 2 tbsp garlic chopped

  • 1 tsp ginger chopped

  • 3 red chillies slit into half

  • 1 tbsp red chilli paste

  • 1 tsp soy sauce

  • 2 tsp tomato ketchup

  • 2 green bell pepper cut into square pieces

  • 2 tbsp spring onion greens chopped

Instructions:

  1. In a bowl, mix salt, ginger garlic paste and vinegar.

  2. Add the chicken pieces and mix well. Keep aside for 30 minutes.

  3. Add 2 tbsp of cornflour and all purpose flour in the chicken and coat the chicken well with the dry mixture.

  4. Heat the oil in a pan and deep fry the chicken pieces till golden brown and keep aside.

  5. Heat another 2 tbsp oil in a separate pan. When the oil is hot, add garlic, ginger and red chilies. Saute till the garlic is slightly browned.

  6. Add the red chilli paste, soy sauce and tomato ketchup and fry/saute for a few seconds.

  7. Mix 2 tbsp cornflour in a cup of water and add it in the pan.

  8. Cook till the gravy thickens. Adjust water according to your liking.

  9. Add green bell peppers and the fried chicken pieces. Cook for 2-3 minutes.

Serve hot with fried rice, wok noodles or steamed rice. For extra spice add a tad bit of sambal oelek or red chilli paste!
