Puff Pastry Bites

Ingredients:
1 sheet of puff pastry
6 Slices of Proscuitto
1 ball of burrata cheese
1/2 Jar of Sliced Sun Dried Tomatoes
1/2 Cup of Homemade Pesto
Instructions:
Heat the oven at 375 degrees.
Thaw the puff pastry and bring to room temperature. Roll out on a floured surface to a neat rectangle by trimming off the sides. Cut into 8x8 inch squares.
Layer half of the squares with a tbsp of pesto, top with a couple of slices of sun dried tomatoes and a small cut of the cheese.
Now lay the remaining squares on top - seal with a little beaten egg and press the ends with a fork, going all around to create an indented design.
Place the parcels on a baking sheet lined with parchment paper, make a slit or two on top, brush with some beaten egg and sprinkle some coarsely ground black pepper.
Bake for 25/30 minutes until golden & crispy.
Serve sprinkled with thyme & basil !
I paired these with Tomato Bisque Soup and a hearty salad.
