Puff Pastry Bites

Ingredients: 

  • 1 sheet of puff pastry

  • 6 Slices of Proscuitto

  • 1 ball of burrata cheese

  • 1/2 Jar of Sliced Sun Dried Tomatoes 

  • 1/2 Cup of Homemade Pesto

Instructions:

  1. Heat the oven at 375 degrees.

  2. Thaw the puff pastry and bring to room temperature. Roll out on a floured surface to a neat rectangle by trimming off the sides. Cut into 8x8 inch squares. 

  3. Layer  half of the squares with a tbsp of pesto, top with a couple of slices of sun dried tomatoes and a small cut of the cheese.

  4. Now lay the remaining squares on top - seal with a little beaten egg and press the ends with a fork, going all around to create an indented design.

  5. Place the parcels on a baking sheet lined with parchment paper, make a slit or two on top, brush with some beaten egg and sprinkle some coarsely ground black pepper.

  6. Bake for 25/30 minutes until golden & crispy.

  7. Serve sprinkled with thyme & basil !

I paired these with Tomato Bisque Soup and a hearty salad.
