BBQ Chicken Tacos and Avocado Ranch

Ingredients:

For the tacos:

  • 2 pounds (around 900 grams) boneless skinless chicken breast or thighs

  • 2 teaspoons smoked paprika

  • 2 teaspoons chipotle chili powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cinnamon

  • 1 teaspoon red chilli flakes

  • Kosher salt , to taste

  • Black pepper, to taste

  • 2 cups of BBQ sauce

  • 1/2 cup of your favorite beer, or chicken broth

  • 3 cups shredded cabbage

  • 2 cups grilled corn

  • 1/2 cup fresh cilantro roughly, chopped

  • 2 tablespoons chopped fresh chives

  • Warmed corn or flour tortillas

  • Shredded sharp cheddar cheese

  • 1 lime, juiced

  • 1 jalapeno, sliced

For the avocado ranch:

  • 1 avocado, halved

  • 1/2 cup buttermilk

  • 1 cup fresh cilantro

  • 1 jalapeño, halved and seeded

  • juice from 1 lime

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Kosher salt, to taste

Instructions:

  1. In the bowl of your instant pot (for stove top cooking see note below), combine the chicken, chili powder, garlic powder, paprika, cinnamon, red chilli flakes, 1 1/2 cups of BBQ sauce, beer, and a pinch each of salt and pepper.

  2. Cover and cook on high pressure for about 8 minutes. Once done cooking release the steam.

  3. Switch the instant pot to sauté and cook for about 5 minutes, until the sauce thickens. Shred the chicken with two forks and add the remaining (1/2 cup) BBQ sauce.

  4. While the chicken sautés, make the ranch by combining all the ingredients in a blender and blending until smooth and creamy. Add additional buttermilk, 1 tablespoon at a time, as needed to thin the sauce.

  5. To make the slaw, add cabbage to a bowl with a few spoonfuls of the ranch and toss to combine.

  6. Grill some corn, chop the cilantro and chives, and keep aside seperately for tacos.

  7. Now on warmed tortillas, add chicken, shredded cheese, the slaw, corn and top with chives, cilantro, a slice of jalapeno, some lime juice and some salt. Enjoy

Notes:

  1. To cook over a stove simply heat 1 tablespoon of oil and follow steps 1, 2 and 3 by cooking and simmering the chicken over slow heat (covered) until it starts to separate. This should take between 1-2 hours. Steps 4-7 remain the same.
