Cajun Chicken Alfredo

Cook Time: 30 - 45 minutes
Total Time: 45 - 60 minutes
Servings: 5-6

Ingredients: 

  • 4-5 oz (around 150 grams) boneless chicken breasts

  • 3 tablespoons blackened spices - cajun Style 

  • 2 tablespoons vegetable oil or pomace 

  • 350 gms Fettuccine - cooked as per instructions 

  • 3 heaped tablespoons minced garlic

  • 1/2 cup dry white wine

  • 3 cups heavy cream

  • 1/2 cup chicken stock

  • 1 cup sliced sun dried tomatoes in oil- drained

  • 1/2 cup grated parmesan 

  • 1 teaspoon fleur de sel or any fine sea salt

  • 1 tablespoon freshly ground black pepper

  • 1 teaspoon red chili flakes 

  • I bunch- sliced green onions 

  • 2 tablespoons finely chopped parsley

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Coat the chicken in the blackened cajun spices.

  3. Heat a cast iron skillet for a good 10 minutes on medium heat and add the oil. 

  4. Now add the chicken breasts and cook for a few minutes on each side.

  5. Place the skillet in the oven and cook chicken until done ( internal temperature 165 degrees Fahrenheit). Keep warm in a tray. Slice. 

  6. In the same skillet, add a little bit more oil and the garlic. Cook until fragrant and pour the wine. Add in the cream and stock and let cook on low heat until slightly thicker. 

  7. Now add the parsley and greens onions and the boiled fettuccine along with the sliced chicken. Add the Parmesan and serve warm !
