Garlic Avocado Toast

Servings: 4

Ingredients:

  • 4 thickly sliced sourdough bread

  • 2 avocados

  • 4 eggs softly boiled or poached

  • 1 tablespoon white chia seeds

  • 1 teaspoon red chili flakes 

  • Micro greens, cilantro or baby arugula for garnishing

  • Roasted garlic butter ( see below )

  • Fleur de sel 

  • Any Chilli Oil

For roasted garlic butter:

  • 4 sticks unsalted butter at room temperature

  • 1 whole garlic 

  • Black pepper 

  • Kosher salt 

Instructions:

  1. Heat the oven at 375 degrees or 400 degrees. 

  2. Apply the garlic butter on both sides of the bread and put them on a parchment lined tray in the oven. Bake for 15 min sor so until nice & Golden ( turning once in between) 

  3. In the meantime prepare the eggs to your liking and slice the avocados thinly. 

  4. When the bread slices are ready, take them out and spread the avocado slices like a fan shape. Top with the egg and sprinkle some chia seeds, chili pepper, fleur de sel & some chili oil. Decorate with some greens and serve immediately.

  5. Variations : You can omit eggs and serve just with avocado- topping with the white chia seeds and chili pepper. Add some tomato slices. Top with cilantro or a lightly seasoned arugula. 

For roasted garlic butter

  1. Heat oven at 300 degrees.

  2. Slice the whole garlic of the top (cut off 1/4th from the top ). Keep all pieces.

  3. Take a large piece of aluminum foil and put the garlic on it. Sprinkle some salt & a little olive oil. Seal the foil like a tent and put it in the hot oven for about an hour. The garlic will be very fragrant and soft.

  4. Let it cool slightly and scoop out all the good stuff. Mix in with the butter and whisk well. Add some black pepper & salt and save. 

Tip : I usually keep this in my refrigerator at all times. It’s great to use for any quick garlic bread/toast.
