Huevos Rancheros

Ingredients:

  • 4 crispy corn tostadas 

  • 2 avocados 

  • 2 tomatillos

  • 1/2 Lime juice

  • 1/2 jalapeño de-seeded

  • 1 can black re-fried beans

  • 1 teaspoon cumin

  • 1 tablespoon oil

  • 1/4 cup water

  • 1/2 teaspoon red chili pepper

  • 1 teaspoon red degi mirch (paprika)

  • 4 eggs

  • Shredded cheese - Cheddar or Mexican blend 

  • 8-10 cherry tomatoes - sliced

  • Cilantro

  • 2 sliced green onions  

  • Kosher salt 

  • Chilli oil 

Instructions:

  1. In a small grinder, grind the tomatillos, jalapeño and lime juice. Add the avocados and grind till it all comes together. Add salt and keep aside.

  2. In a small pan heat oil, add cumin and then the paprika. Add the re-fried beans and stir well until heated through. Add water to get a smooth consistency. Check seasonings.

  3. Heat oven to 350 degrees and place the tostadas in a foil-lined tray. Sprinkle cheese (per your taste) and put the tray in the oven until the cheese starts to melt. Remove from the oven. 

  4. In the meantime, Cook eggs sunny side up. 

  5. Put the beans on the hot tostadas, add the avocado guacamole, top with eggs and sliced tomatoes. Decorate with cilantro sprigs, sliced green onions. Drizzle some chili oil and serve! 

This recipe is our family favorite on the weekends and during holidays. Simple and easy to make and makes a great visual delight!
