Muffaletta Sandwich

Servings: 5-6

Ingredients:

For the filling:

  • 1/2 cup marinated artichoke hearts

  • 1 roasted red pepper

  • 1 tablespoon dijon mustard

  • 4 slices ham slices

  • 6 slices spicy salami

  • 6 slices prosciutto 

  • 4 slices provolone cheese 

  • 4 slices mozzarella or burrata cheese

  • 1 loaf ciabatta 

  • 1 cup Arugula 

  • 1 medium red onion thinly sliced.

For the dressing:

  • 2 tablespoons sherry vinegar

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt & freshly ground pepper

Instructions:

  1. Whisk the dressing ingredients together. Keep aside.

  2. Apply a little oil & roast the red pepper in oven at 400 degrees. Cool . Peel off the skin, discard peel & seeds. 

  3. Roughly chop or grind the artichokes along with the roasted pepper. 

  4. Cut the loaf lengthwise and scoop out some of the bread. 

  5. Now apply the mustard to the insides of the loaf. 

  6. Layer the meats along with the cheese slices. Stack high. Add onions.

  7. Pour the dressing on top and close the loaf.

  8. Wrap tightly in parchment paper or foil and leave in the refrigerator for a few hours, preferably overnight for the flavors to blend. 

  9. Before serving, add the arugula and cut into slices. Serve with any chips on side!
