Pappardelle with Spicy Sausage and Caramelized Onions

Servings: 4-6 people
Ingredients:
1 packet pappardelle pasta or fettuccine
4-5 spicy sausages- casings removed
2 tablespoons butter
2 large yellow onions, thinly sliced
4 garlic cloves- minced or chopped
1/2 cup sherry vinegar
1 cup home made chicken broth ( or store bought)
1 can whole San Marzano tomatoes, drained and chopped
1 tablespoon minced thyme
1/2 cup shredded parmesan cheese
1/2 cup basil leaves
Kosher salt & freshly ground pepper - to taste
Crushed red pepper flakes
Instructions:
Heat a large skillet and add the sausage meat to it. Cook until browned. Remove and keep aside.
In the same skillet, add the onions plus butter and cook on very low heat for about 20/25 minutes until golden and caramelized.
Add the garlic and cook until fragrant.
Add the sherry vinegar and using a wooden spoon scrape the browned bits from sides. Cook until reduced.
Add the sausage to this onion mixture along with the stock, tomatoes, thyme & chili pepper.
Simmer on low heat until slightly thickened- about 15 minutes or so.
Taste and adjust the seasonings with salt & pepper.
Cook pasta as per the package instructions. Cook al dente. Reserve some pasta water.
Transfer the pasta to the skillet and toss well using pasta water to loosen sauce, if necessary.
Divide into bowls, sprinkle Parmesan generously and top with basil leaves.
