Tamarind Margaritas

Ingredients:

For the tamarind paste:

  • 20 tamarind pods

  • 1 cup hot water

For the tamarind maragrita:

  • 3 oz tequila

  • 1 lime, juiced

  • 1/2 lemon, juiced

  • 2 tbsp agave syrup

  • 3 oz tamarind paste

For the chili salt:

  • Kosher salt

  • Paprika

  • Palm sugar

Instructions: 

For the the chili salt:

  1. Combine the salt, chili powder, and sugar on a shallow plate. Rim your glasses in salt, then set aside.

For the tamarind paste:

  1. Remove the brown, hard outer shell of the tamarind pod and pull off the stringy bits.

  2. Place tamarind into a bowl and pour 1 cup hot water. Soak for around 5 minutes and then mash the tamarind into water so it melts and dissolves.

  3. Place fine mesh sieve over an empty bowl and place tamarind water into the sieve. Press the tamarind through the sieve and into the bowl below (you're trying to separate the pulp from the black seeds).

  4. Once all the pulp has been separated from the seeds, discard the seeds, and whisk together the pulp for consistency.

  5. Store, covered, in the fridge until ready to use.

For the tamarind margarita:

  1. Fill a shaker with ice and pour in tequila, lemon juice, lime juice, agave, and tamarind paste.

  2. Shake and pour into prepared glasses.
