Smoked Salmon Toast with Creme Fraiche

Cook Time: 5-10 minutes
Total Time: 15-20 minutes
Servings: 2

Ingredients:

  • 2 slices of any bread (I used sourdough)

  • 1 teaspoon butter + 1 tablespoon butter 

  • Chopped dill

  • Chopped chives

  • 1/2 sliced avocado 

  • 1 tsp lemon juice

  • 2 tablespoons creme fraiche 

  • 2 eggs

  • Salt to taste

  • Black pepper

Instructions:

  1. Beat the eggs with with a pinch of salt, black pepper, some chives and 1 tablespoon of creme fraiche.

  2. Heat a pan on low heat, add a tablespoon of butter and pour the egg mixture. Scramble till cooked but slightly loose.

  3. On a hot grille, toast the bread slices with a dab of butter.

  4.  Arrange the avocado slices, sprinkle some lemon juice, top with scrambled eggs, the leftover creme fraiche and sprinkle with dill & chives.
