Spicy Asian Noodle Soup

Ingredients:
10/12 large shrimp peeled & deveined (you can use any protein of your choice)
2-3 tablespoon red thai curry paste
2 corns, kernels
1 zucchini
1/2 onion
2 tablespoon coconut oil
1 tablespoon sambal oelek
1 teaspoon garlic chopped
1 tablespoon ginger, grated
1 tablespoon fish sauce
1 can coconut milk
Rice noodles
Cilantro, basil & green onions for garnish
Instructions:
Slice the kernels from the corn. Dice the zucchini and the onion. Set aside
Heat the oil and sauté the onions until soft. Add the ginger and garlic and cook until fragrant.
Add the zucchini and corn and cook for a few more minutes.
Now add the red thai curry paste, fish sauce plus the coconut milk. Add a little water to thin if needed and boil for a few minutes.
Sprinkle some salt and pepper on the shrimp. Sauté the shrimp separately with a little coconut oil.
Boil the noodles as per the instructions.
Add noodles to the hot soup, top with shrimp. Add cilantro, basil & scallions for flavor and enjoy !
