Kimchi Sandwich

Total Time: 25 minutes
Servings: 4-5

Ingredients:

  • 1/2 jar kimchi ( I used Mother-in-Laws Kimchi brand )

  • 6 slices of sourdough bread

  • 1 tablespoon white or black sesame seeds 

  • 6 slices of cheddar cheese slices ( or grated )

  • 6 slices of havarti cheese

  • 3 tablespoons gochujang 

  • 2 tablespoon salted butter or my garlic butter (recipe on website - see garlic avocado toast)

  • 1 teaspoon minced garlic

  • 1/4 cup basil leaves

  • Chives- chopped

Instructions:

  1. Mix the sesame seeds & garlic with butter. If you are using the garlic butter, no need to add garlic.

  2. Spread the butter on both sides of the bread and apply the gochujang on inside of the slices. 

  3. Layer with cheese, kimchi, basil. 

  4. Close the sandwiches and sprinkle some  seasame seeds on top.

  5. Grill in a panini maker until toasted and golden. Sprinkle chives and any leftover basil. Enjoy!

You can serve this with any soup. I like to serve with our favorite broccoli soup. It’s my sister-in-laws recipe that I will post on the website shortly.
